Ingredients:
2 pounds Steckler Family Meats ground beef
1 grated onion
3/4 cup panko bread crumbs
2 eggs
salt & pepper to taste
1 tsp garlic powder
2 Tbsp oil
1 stick of butter
1/2 cup flour
4 cups beef stock
2 tsp beef stock base
1 cup milk
Directions:
In a mixing bowl, combine the ground beef, grated onion, bread crumbs, eggs, garlic powder, and salt & pepper.
Heat a large pan with high sides on medium-high heat. Add the oil to heat.
Once heated, use a tablespoon-sized scoop to scoop out the meat mixture. Add the meatballs to the pan to cook. Brown on all sides before taking them out of the pan. It will take several rounds to cook all the meatballs.
Once all the meatballs are out of the pan, add the stick of butter to melt. Don't clean out the pan after frying the meatballs. Keep the drippings. Add the flour to the melted butter to make a rue, and cook the rue for 2 minutes to cook out the flour taste.
Add the stock, milk, stock base, salt, and pepper to the rue. Continue to stir until the gravy has thickened a bit. Then add the meatballs back to the gravy. Let this mixture simmer for 15 minutes to cook the meatballs fully.
Serve the Swedish meatballs on your choice of egg noodles or mashed potatoes.
