Ingredients:

2 pounds of chicken breast
1 pound of SFMC ground beef
1 can of corn (12oz)
1 can of black beans (12oz)
1 can of green chilies (4oz)
2 packets of taco seasoning
2 medium sized jalapeños
1 medium green pepper
1 medium onion
1 can of enchilada sauce (12oz)
large soft tortilla shells
shredded cheese of your choosing
For wrapping:
plastic wrap
foil
Directions:
Bake the chicken until cooked through. Once cooked, shred it.
Brown the ground beef until 1/2 cooked.
Dice the jalapeños, onion, and pepper.
Add the diced vegetables to the 1/2 cooked beef and finish cooking.
Add the chicken, corn, black beans, green chilies, taco seasoning, and enchilada sauce to the beef and veggie mixture. (may need to add water to obtain a desired consistency.)
Let the mixture cool before you start to make the burritos.
Once you are ready to roll the burriots, lay down a piece of plastic wrap and place the tortilla on top of the plastic. Add a hearty scoop of the mixture to the center of the tortilla then top with cheese and wrap. Once it is wrapped, then wrap that plastic around it and wrap that in a slice of foil.
Once they are all wrapped they are ready to be placed into the freezer!
When you are ready to eat them, take the outside wrap off and microwave. From there you can choose to toast up the outside.
Enjoy!
