INGREDIENTS:
1 pound SFM ground beef or SFM chorizo
1/2 an onion; chopped
1 can red enchilada sauce
1 can green enchilada sauce
1 package tortillas
1 8oz block of cheddar cheese; shredded
1 tablespoon Mexican seasoning
salt and pepper to taste
Directions:
Brown the ground beef or chorizo and half an onion in a skillet. If using ground beef, season with the Mexican seasoning, salt, and pepper. The chorizo does not need seasoning.
After browning, set aside the burger and onion mixture on a plate with a paper towel to collect any extra drippings.
Open the cans of enchilada sauce, and mix in a separate bowl. Add a thin layer of sauce to the bottom of a 9 x 12 baking pan.
To assemble the enchiladas, lay a tortilla flat on the counter. Add 4 tablespoons of ground meat to the middle of the tortilla. Sprinkle with cheese. Then wrap it up by folding in two opposite sides, and rolling the shell over itself.
Add each enchilada to the baking dish. Once the dish is filled with enchiladas, pour the remaining sauce over the enchiladas. Sprinkle with the remaining cheese.
Bake in a 350-degree oven for 1 hour until the sauce is bubbly and the cheese is melted and golden brown.
Top with your favorite toppings like sour cream or avocados. Enjoy!
