Ingredients:
Filling:
1 pound ground beef
1 can pinto, black, or chili beans drained and rinsed
1 can corn, drained
1 package of toco seasoning
1 can Rotel tomatoes
Cornbread Muffin Mixture:
1 package cornbread muffin mix
1 egg
1 cup milk
1/3 cup vegetable oil
Instructions:
In a large skillet, brown the ground beef over medium heat until it's fully cooked. Drain any excess fat.
In a bowl, mix together the cornbread mix according to the package.
In a crockpot, add the beef, pinto beans, corn, Rotel, and taco seasoning. Stir to combine.
Pour the cornbread mix on top of the beef and bean mixture.
Cover the crockpot and cook on low for 4-5 hours or until the cornbread is cooked through. Additional toppings on this dish include sour cream, cheese, hot sauce, avocado, and tortilla chips.
