Steak Strips & Potatoe Wedges

Ingredients:
2 packages SFM Co Round Steak Strips (Fajita strips)
4 medium-sized potatoes; cut into wedges
1 Tbsp bacon grease or vegetable oil
3 Tbsp butter
2 Tbsp garlic powder
salt and pepper
crushed red chili flakes, optional

Steak Marinade
1/3 cup soy sauce
1 Tbsp vegetable oil
1 Tbsp hot sauce
pepper
Instructions:
Marinate the steak strips. Add all of the marinade ingredients to a bowl and mix well. Add the steak strips and mix to coat the strips well. Let sit while you cook the potatoes. *You can marinade the strips in a plastic zip baggie for easy clean-up.
In a large cast iron skillet over medium-high, add the bacon grease. Once melted, layer the potatoes in the bottom of the pan, flesh side down. Cook for about 4 minutes on one side before turning over and cooking for another 4 minutes on the other side.
Once cooked, pull the potatoes out of the pan and set aside while you make the steak strips.
Let the pan heat back up and add 1 Tbsp butter. Layer 1/3 of the strips in the pan. Sprinkle with garlic powder and pepper flakes if desired. Cook for one minute on each side.
Pull the strips out when finished, add another Tbsp of butter, and add another 1/3 of the strips. Continue steps 4 and 5 until all strips are cooked.
When the last batch of steak strips is finished, add all the steak and potato wedges back to the pan to heat through. Stir in the remaining marinade and let cook for one minute. The marinade should coat the potatoes and steak.
